There are meals that feed you. And then there are meals that gather you.

In our home on Key Biscayne, fish tacos are the latter. They are the meal that brings everyone to the kitchen — family crowding around the toppings bar, building their own perfect creation, laughing, tasting, reaching across each other for the guacamole. They are festive and fresh and completely unpretentious. They are summer on a plate before summer has even officially arrived.

And they happen to be incredibly good for you.

That last part? That's never an accident in my kitchen.

People sometimes assume that eating clean means eating less joyfully. That real, healthy food is somehow separate from delicious, fun food — the food you make for celebrations, for family gatherings, for Cinco de Mayo on a warm, summer-is-coming May evening. I am here to tell you — from my kitchen to yours — that is simply not true. My philosophy has always been this: use the cleanest, freshest, most quality ingredients in everything you make. Everything. Tacos. Steak. Salad. Cake. Sunday breakfast. Weeknight dinners. Holiday feasts. When you start with real, whole, quality ingredients, the food — and the off-the-charts deliciousness — takes care of itself. It tastes better. It nourishes deeper. And it never feels like deprivation.

Mahi-mahi is quintessentially Florida — firm, flavorful, and absolutely gorgeous when seasoned and grilled or baked to perfection. It holds its shape beautifully, flakes into perfect strips, and carries bold seasoning without losing its natural sweetness. Every great taco starts with great seasoning. And after years of reading labels on store-bought packets — fillers, anti-caking agents, sugar, mystery ingredients — I developed my own. Chris' Awesome Homemade Taco Seasoning is pure spice. Nothing else. Chili powder, cumin, paprika, oregano, garlic, onion, salt and pepper — that's it. It takes less than two minutes to mix, keeps beautifully in a jar all summer long, and works on absolutely everything. Fish. Meat. Poultry. You name it.

Once you make it, you will never go back to a packet. I promise you that.


The Toppings Bar — Where the Magic Happens.

Here is my favorite part of taco meals: the toppings bar. Set it all out, step back, and let everyone build their own perfect creation. This is where tacos inspire a gathering rather than just a meal. Fresh organic guacamole. Pico de gallo. Shredded lettuce. Cilantro. Onion for those who partake. Jalapeños for the brave (though fresh are not very spicy and beautifully, tastefully earthy in my view!). And my personal signature topper — Lime Fresh. Plain Greek yogurt — or sour cream if you prefer — mixed with fresh lime zest and a generous squeeze of lime juice (and a little salt if you wish to take the edge off the lime). Cool, tangy, creamy, and completely addictive. It is the finishing touch I learned from my culinary queen daughter, Catherine, that makes these tacos unforgettable. And if you choose the Greek yogurt version? Hello, extra protein and calcium. Your bones just quietly thanked you again.

GET READY TO ENJOY THIS FESTIVE RECIPE! CHRIS' HEALTHY HAPPY FISH TACOS. 🌮

Key Biscayne Style | Cinco de Mayo-Inspired | No Deprivation Zone™-Approved!

SERVES: 4

PREP TIME: 15 minutes

COOK TIME: 10-15 minutes


PRO TIP: To optimize recipe deliciousness, your health, and feeling your best, ALWAYS use the freshest, highest-quality ingredients. Organic whenever possible.


THE PROTEIN:

  • 1½-2 lbs fresh Mahi-Mahi fillets, cut into 3-4 inch strips (substitute: grouper, cod, halibut, ground bison, or ground turkey)

  • 1-2 TBSP avocado oil

  • 1-2 TBSP fresh lime juice

  • 1/8-1/4 cup water (adjust to your preferred paste consistency — thicker or thinner, both are delicious!)


CHRIS' AWESOME HOMEMADE TACO SEASONING:

Per pound of protein

  • 1 TBSP chili powder

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • ¼ tsp dried oregano

  • ½ tsp paprika

  • 1½ tsp ground cumin

  • 1 tsp salt

  • 1 tsp black pepper

  • 1-2 TBSP avocado oil

  • 1-2 TBSP fresh lime juice

  • Add ~ 1/4c water as needed to form a thick liquid paste


Mix all spices together; add avocado oil, lime juice, and water and mix to form a liquid paste. Pat fish dry, cut into 3-4 inch strips, dip into paste, and coat generously.


THE SHELLS: (choose your faves!)

  • Siete Foods grain-free hard shell tacos

  • Siete Foods cassava flour soft tortillas

  • Butter lettuce cups

  • No shell → Healthy Happy Taco Salad over chopped lettuce (my family likes a crisp organic iceberg for these; serve with Siete Dip Chips or your favorite quality tortilla chips!)


THE TOPPINGS BAR:

  • 🥑 Fresh organic guacamole

  • 🍅 Fresh pico de gallo or quality salsa (this Cinco de Mayo I enjoyed it with a quality mango salsa in addition to the traditional!)

  • 🌿 Fresh cilantro, chopped

  • 🧅 Onion, finely diced (optional)

  • 🥬 Shredded lettuce (we like iceberg for this, or butter lettuce)

  • 🍋‍🟩 "Lime Fresh" — plain Greek yogurt OR sour cream mixed with fresh lime zest and a squeeze of lime juice (Chris' signature topper inspired by my daughter, Catherine's, culinary genius!)

  • 🌶️ Fresh jalapeño (diced or sliced; fully optional but we love the fresh color and taste along with the "spicy-but-not-too-spicy" vibe!)

  • 🍚 Organic cilantro-lime rice alongside (optional)


TO COOK THE FISH:

Grill: Preheat to medium-high. Grill seasoned strips 3-4 minutes per side until cooked through and slightly charred.

Bake: Preheat oven to 400°F. Arrange strips on parchment-lined baking sheet. Bake 10-15 minutes until fish flakes easily — timing depends on thickness of fish and your oven. Check at 10 minutes!

Air Fry: 400°F for 8-10 minutes, flipping halfway. Crispy outside, tender inside!


BUILD YOUR PERFECT TACO:

Layer your shell or lettuce cup with fish strips, guacamole, pico, lettuce, cilantro, onion, and a generous dollop of Lime Fresh. Add jalapeños if you dare! Serve with cilantro-lime rice and your favorite, quality tortilla chips alongside.


CHRIS' NOTE:

"This is my go-to when I want something that feels festive and indulgent but is completely clean and nourishing. The seasoning is pure spice — no fillers, no sugar, no mystery ingredients — and it works on absolutely everything. Pro Tip: Save time for the next round by making a double batch. Just keep it in a jar to use all summer long!"
