"Healthy-ish" No-Bake Organic Date Dessert Turtles

Talk about satisfying your sweet tooth WITHOUT the guilt! These "Healthy-ish" No-Bake Organic Date Dessert Turtles are my latest go-to when I want something indulgent that still fuels my body with real, whole food ingredients. They're ridiculously easy, mostly naturally sweet, and deliver a taste explosion that'll make you forget about processed desserts forever.


Note: Some chocolate chips contain added sugar (including the Enjoy Life brand which has ~ 7g per serving). For an even cleaner option, look for dark chocolate with minimal added sugar.


Why These Ingredients Are Powerhouses.

Medjool Dates are nature's candy—packed with fiber, potassium, magnesium, and natural sugars that give you sustained energy without the crash. They're also rich in antioxidants and support digestive health.

Raw Organic Cashew Butter boasts healthy fats, plant-based protein, and minerals like copper and magnesium. It's creamy, satisfying, and supports heart health.

Chocolate (choose quality!) contains antioxidants that support brain and heart health. While dark chocolate (70%+ cacao) offers the most benefits, semi-sweet chocolate like the Enjoy Life mega chunks I use still provides antioxidants along with that irresistible chocolate flavor. The key? Get the cleanest, best quality chocolate you can find with the least added sugar. I use Enjoy Life mega chunks because they're free of soy and dairy—perfect for those with sensitivities—but feel free to use your favorite high-quality chocolate, whether semi-sweet or dark.

Organic Coconut Oil adds healthy medium-chain triglycerides (MCTs) that support brain function and metabolism, plus it helps create that perfect chocolate consistency.

Fleur de Sel (fancy sea salt flakes) is the star ingredient! It brings all the flavors together and creates that sweet-salty magic that makes these turtles absolutely irresistible.


The combination of naturally sweet dates, rich cashew butter, melted chocolate, and those flaky sea salt crystals? It's a beautiful, fairly guilt-free taste explosion that satisfies every craving. Not only does this dessert taste good. It allows you to FEEL good after enjoying it. Guilt-free!


INGREDIENTS.

  • Organic Medjool Pitted Dates (count on 1-3 per person; I typically make 24)

  • ~1 Cup Raw Organic Cashew Butter

  • 12 oz High-Quality Chocolate Chips (I use Enjoy Life mega chunks—soy-free, dairy-free)

  • ~1 tsp Organic Coconut Oil

  • Fleur de Sel or Sea Salt Flakes


Note: Quantities can be modified based on how generously you like to top your dates and how large your dates are. Play with it!


INSTRUCTIONS.

STEP 1: Prep Your Dates. Pit your Medjool dates if they're not already pitted. Line a large baking sheet with parchment paper and lay the open dates out. Press each date down gently with your hand or the bottom of a glass to flatten slightly—this creates the perfect base for your toppings.

STEP 2: Add the Cashew Butter. Warm your cashew butter slightly (I do this in a small pot on the stove) so it's easy to dollop. Spoon a generous amount onto each flattened date.

STEP 3: Melt and Dollop the Chocolate. In a double boiler (I just use a small pot right on the stove; you can also microwave should you wish), melt your chocolate chips with the coconut oil until melted--it's not necessary for it to be perfectly smooth and silky but you do you! Dollop the melted chocolate over the cashew butter layer on each date.

STEP 4: The Finishing Touch. Sprinkle those beautiful Fleur de Sel flakes over the top of each turtle while the chocolate is still warm.

STEP 5: Set and Enjoy. Place the baking sheet in the fridge for about 20-30 minutes until the chocolate sets. Voilà—a delicious and healthy-ish dessert in no time flat!


Store these in the fridge (they won't last long!) and enjoy them as a post-dinner treat, an afternoon pick-me-up, or whenever you need something sweet that actually loves you back.


Simple, real food desserts ARE not only possible—they're absolutely delicious.


PRO TIP: Always use the best, freshest, good, quality ingredients. Organic if possible.
