Chris' Game Day Chili Recipe!

PERFECT FOR FALL AND WINTER FAMILY FOOTBALL WEEKENDS OR AS A CLEAN HEALTHY CHILI OPTION TO COOK UP AND ENJOY ALL WEEK LONG!
THE BEST PART? IT’S GLUTEN FREE, DAIRY FREE, AND DELICIOUS AS IS! I LIKE TO PAIR IT WITH A GOOD ORGANIC RICE AND/OR ORGANIC SPAGHETTI SQUASH. THOSE WHO WISH TO ADD CHEESE, SOUR CREAM OR YOGURT, ETC. AS A GARNISH MAY DO SO!
My husband loves this recipe and really enjoys Family Football Sundays featuring my Game Day Chili. It can be as “clean” and healthy or as decadent as one desires, e.g., my husband adds lots of cheese and sour cream to his bowl, while I enjoy mine more “pure”, with some gorgeous guacamole, fresh cilantro, and sometimes a wedge of lime in addition to rice and spaghetti squash.
INGREDIENTS. Always use the best, quality, organic ingredients as possible. Feel free to make substitutions based on personal preferences/sensitivities.
2 lbs. Ground Meat: I think this recipe is best with the fresh taste of ground venison. Bison, elk, venison are my faves to choose from for optimizing protein and minimizing saturated fat; feel free to substitute with organic turkey or other ground meat.
1 Onion (can use Shallot or Leek), diced
1 Fresh Jalapeno Pepper, diced
Good Olive Oil
2 TBSP each: Chili Powder and Ground Cumin
1 Tsp each: Ground Allspice, Oregano, Good Salt
1 28 oz. Can of Crushed Tomatoes
1 14 oz. can of Diced Tomatoes
1 Cup Water (or enough to cover the meat)
Optional Toppings and Additions: Fresh Guacamole and/or Avocado Slices, Cilantro, Onion, Jalapeno, Sour Cream or Yogurt, Shredded Cheese; I like to enjoy my chili with Organic Rice (love the Black "Forbidden" Rice) and Spaghetti Squash
MY PROCESS. This recipe is truly so easy! While it's cooking, there's plenty of time to enjoy family and friends, and prep the spaghetti squash, rice, and optional toppings.
In a large pot, cook the meat and onion (can sub leek or shallot for the onion) in a little good olive oil.
Once cooked through, add spice mixture until combined.
Add remaining ingredients, bring to a boil, then simmer 1-2 hours.
Serve with your favorite rice and/or spaghetti squash, garnish with fresh organic cilantro, guacamole and/or avocado, and enjoy this delicious meal!
Note: I always have sour cream, plain unsweetened yogurt, and shredded cheese avail for those who wish to partake. My family doesn’t like me to add beans but feel free if your family enjoys them!
